Burritos con arroz y frijoles and whatever else I had lying around

When I’m running short on time my favourite kinds of meals are ones that I can just assemble on the fly. Burritos are my go-to for that kind of thing - just toss a few ingredients into a tortilla, wrap it up and - BAM - dinner! 

Latin cuisine is a comfort food for me. When I was in South America I ate some form of  rice and beans nearly every day. Great for a couple of weeks, but after three months the novelty and deliciousness had worn off. Also, a diet composed almost solely of that is not so great for “Operation: fit-into-pants”. But that’s another story.
